Have you ever noticed that some chocolates resemble the shape of an olive? Well, in 1802 the Genoese engineer Bozelli modified an olive press and realized a hydraulic machine able to refine the cocoa mass and mix it with sugar and vanilla. Isn’t it ironic? From that moment on, chocolate has been one of the protagonists of the Genoese Christmas.
